Parmesan Cheese and Salami Rye Bread

I love to see what other people bake and I’m curious about their stories. A while back I found the blog of Judd of Weekendloafer.  It’s full of great looking breads and Judd’s story is about her beautiful mountain.
 I found this mouthwatering bread filled with blue cheese! We have some Dutch cheeses left in the refrigerator, but there’s no French blue cheese in there. I don’t complain, but …. the taste and smell of a nice blue cheese, hmmmm. And tucked in a lovely rye loaf it's  heavenly. 
But what can I tuck in my lovely rye loaf? I found a piece of Salami and some Parmesan cheese, which would be very nice too.

The choice was easy; today I bake Parmesan Cheese and Salami Rye BreadParmesan and Salami are eaten in Italy but also in France. So, it’s a French bread, n'est-ce pas?

Since this July is the month of Cindystar’s French Bread I will send this loaf to her. Cinzia of Cindystar  is the charming host of Bread Baking Day#52. She came up with a French theme for this month. I already baked a delicious Couronne Bourdelaise for BBD. 
Instead of two big loaves I followed Judd and baked four small loaves. I like to shape a loaf and decided to shape these loaves myself instead of using bread pans. The moment I’m writing this post I understand why Judd used the bread pans. Judd scored the loaves before proofing. I didn't. My loaves opened up and the filling almost poured out. It looked very rustic! Or is volcanic eruption a better description? Decide for yourself.
Anyway, the loaves tasted delicious and our house smelled like a baguetterie. Bon appétit!

Couronne Bourdelaise

Cindy of Cindystar is the host for Bread Baking Day #52. She came with the great theme: baking French bread
We started immediately to look on the Internet for French bread. I say ‘we’ because Peter, my husband, is also involved in baking bread. He doesn’t only eat all the breads I bake, he especially likes to help choose a bread for Bread Baking Day.


So we found a lot of French breads to choose from. Also we found a nice map full of French breads.


As soon as I saw Couronne Bourdelaise or Crown of Bordeaux I knew “that’s the one I want to bake”. At least try to shape it. A long time ago I found a great explanation by Susan of Wild Yeast on how to shape a Couronne Bourdelaise.
Before I baked this crown I made Cheese and Salami Rye Bread. I was inspired by Weekend Loafer.  I was very happy with the whole wheat levain she used. And decided to use the same levain. 
For the rest of the dough I used Susan’s Norwich Sourdough with a small change. I added gluten; 2% of the flour as an experiment.


The next morning we ate the crown and we loved it. Probably because of the whole wheat in the starter we didn’t taste the sourness of sourdough. We enjoyed the chewiness and crusty crust. It’s definitely the most eatable crown I ever made!

Sourdough Seed Bread

There's a new thing to join; BYOB - Featured Bread Blog. I like the idea of meeting another baker and digging in her or his recipes. This way I can be inspired and learn from them. BYOB chooses the baker and I choose the recipe. 

I enjoyed visiting the first BYOB -Featured Bread Blog: Cathy’s blog Bread Experience

There’s so much Cathy has baked over the years it’s hard to choose a recipe. I wanted to bake with my sourdough starter which made my choice easier. Next steps I took, was looking at titles, ingredients and photos. I try not to judge the bread by the cover (photo) but…. Again it’s difficult because there’re a lot of good looking loaves to choose from. Then I just choose the ingredients I wanted to taste in my bread the next morning for breakfast. This one came out: Seed Bread from Jeffrey Hamelman’s book BREAD. 

The other thing I noticed; Cathy takes a lot of pictures during the process of baking bread. I remembered when I was new at baking my own bread this helped me a lot. And, still I like to look at all those photos. Thank you Cathy for sharing so many recipes and photos, and let’s not forget to thank Jeffrey Hamelman. We enjoyed our Sourdough Seed Bread very much.


When you taste and smell this bread you want to make it too!

Macadamia & Honey Pie

We live in a mountainous area in the North of Thailand. Doi Inthanon is the highest mountain, 2565 meters, in Chiang Mai province. And we can see Doi Pha Hom Pok, 2285 meters, from our house. Doi Pha Hom Pok is the thirth highest mountain in Thailand. We live in a beautiful area with good views from the mountains on the valley. About 40 km from our house we also have Doi Angkhang; 1928 meters high.

We love to go on our motorbikes for a nice drive to Doi Angkhang. There we visit the gardens in the Royal Project and enjoy a lunch with Shan (from Burma) dishes. On the marketplace in the village Doi Angkhang you find good local products. We bought almonds and macadamia nuts. Macadamia nuts also grow in Thailand. They are delicious but have a very hard nutshell. One day soon we will have a macadamia tree in our garden. It takes about 10 years before the first nuts can be eaten, so we better hurry and plant one. The hard nutshells gave Peter some sweat but he cracked the shells (with a hammer because the nutcracker was not enough) just in time for the pie I was preparing.
We were invited by friends for lunch and I was asked to bring something sweet. I found this recipe at Taste.com.au. Have a look at the photo and see if you can resist this pie; I couldn’t. 

I’m happy I made it and was surprised when I saw only 2 people gave their comment and only 2 stars on the original recipe. I wanted to leave a very positive comment but I needed to login and fill in a form and remember my password and … So, I didn’t. I hope when someone wants to bake a Macadamia & Honey Pie they find this post and see what a great recipe it is! We love it and so did our friends. The only thing I changed is to substitute golden syrup for honey. The reason is simple I don’t have golden syrup and I do have a lot of honey. The crust is great, I baked it a bit longer but that’s normal with my oven.

Enough talking, it’s time for baking this great pie.
